Matthew A. Mitsche earned his Ph.D. in 2012 from Boston University in Biophysics and Physiology where he studied the behavior of apolipoprotein fragments at lipid/water interfaces under the guidance of Dr. Donald Small.
After completing his Ph.D. he went to UT Southwestern as a fellow in the lab of Drs. Helen Hobbs and Jonathan Cohen. His fellowship work focused on developing lipidomics and stable isotope flux technology to measure lipid biosynthetic pathways. In 2018 he joined the faculty of UT Southwestern in the Center for Human Nutrition where he is developing ultra-high resolution mass spectrometry technology to measure lipid flux in vivo. His research focuses on studying genetic variants associated with fatty liver disease to better understand the relationship between over-nutrition and poor-health.
